1、新型白酒的生产技术及前景展望新型白酒的生产技术及前景展望 摘要摘要 在20世纪70年代，开始研究挺高新型白酒质量的相关技术措施，有关科研人员经过 20多年的艰苦工作和攻关研究，各项技术配套措施已趋于成熟，相应地新型白酒也获得 长足发展并得到市场和消费者认可，但迂应加强正确的引导和宣传. 近年来, 由于酒类市场发展较快, 竞争激烈, 呈现多元化的发展方向。其中有政府 宏观调控结果, 亦有市场自发引导。但整体都是向市场规范化、品牌高端化、经营中档 化、产品低度化、销售文化渗透等趋势发展。要实现白酒的良性发展, 必须宏观与市场 相结合, 才能构建中国的良性白酒市场。 关链词关链词 ：新型白酒 中国白

6、产技术我国新型白酒生产技术及其发展及其发展 1 1、产酒技术发展历程、产酒技术发展历程 白酒传统生产工艺采用大曲或小曲为糖化发酵剂，进行固态或半固态发酵酿酒。由 于这类糖化发酵剂都是依靠自然界微生物进行扩大培养而成，因此，糖化及发酵力均较 低，导致原料出酒率低，耗粮大。建国初期为了节约粮食，改造传统生产工艺势在必行。 1955年轻工业部组织大力推广纯菌种培养的麸曲法白酒，以此替代大曲普通白酒的 生产，即烟台操作法，出酒率提高10 以上，在节粮上取得了明显的效果。1956年国 务院科学规划委员会组织编制“19561967年科学技术发展远景规划纲要” ，由轻工业 部提出的酒精改制白酒项目被列入“纲要 ” ，随后在19631972年国家科委关于酿酒工 业及其装备技术政策的若干规定草案中明确指出“ 今后十年内白酒的生产工艺， 应以液态发酵为发展方向” 。 据此，北京等地作了初步探索，有的厂采用酒精、香精、糖精加水配制成白酒，投 放市场，由于对传统白酒的香气成分不清楚，产品质量当然很不理想。1964年北京酿酒 厂吸取董酒串香工艺的经验，将麸曲酒醅加少量大曲发酵如天
