1、 I 摘要 本设计为年产 5 万吨 10啤酒厂, 采用的工艺为高浓度稀释工艺。 设计中对全厂的 工艺流程进行了论证,并进行了物料衡算、水消耗、耗冷和耗热的衡算,并且对主要设 备(发酵罐)进行了计算和选型。设计中采用了连续浸渍湿法粉碎,复式浸出糖化工艺 和高温发酵、高温后熟工艺。发酵工段是设计的重点工段,对发酵工段的发酵罐绘制了 总装配图,而且绘制了带控制点的工艺流程图,发酵工段的平面和立面图。本设计采用 高浓度稀释工艺,提高了糖化、发酵、贮酒以及啤酒澄清设备的利用率,适宜酿造淡爽 类型的啤酒。 关键词:啤酒厂;高浓度稀释;发酵罐;工艺设计 II Abstract It is the desig
